When my partner and I came across Mollie's online when looking for an inexpensive hotel for a little Christmas getaway, I knew we'd hit on something special. I've travelled to plenty of places and stayed in a lot of hotels and hostels, and Mollie's really delivers on exactly what you want from a minimalist staycation: they do the simple things right. Perfectly, in fact!
We weren't looking for somewhere in an impressive location, or all the bells and whistles when it came to luxury and service. We got an exemplar experience in modernity, minimality, cleanliness, sustainability, and seamless user experience. And we LOVED the diner for the same reasons - chic, brilliant menu options, tasty as anything. I haven't stopped banging on about it since, and I can't wait to visit the other Mollie's locations.
