We stopped in for dinner while in Gruyères along our 8-day trip through Switzerland. There was a good variety of options on the menu and I found the Cardinal ‘blanche’ to be pretty refreshing and decent, similar to a typical white ale / Hefeweizen. For my main, I ordered the combo fondue (half gruyeres and half vacherin cheese) which came with potatoes and bread. I found the cheese to have a well-balanced creamy flavor and almost tacky texture as it cools around the chunks of bread and potato. One suggestion would be to offer sliced up oven charred pizza crust with a light glaze of tomato sauce as an option for dipping into the cheese. I dipped my wife's pizza crusts into the fondue and the char and chewiness of the crust with the accents of tomato were a fantastic accompaniment to the fondue; way better than just the plain bread and potatoes. Perhaps the fondue community of Switzerland may find my suggestion appalling, but if they try it, I think they may come around because it was awesome. For desert, I had the 'apple pie' which was more like a tart served with fresh and delicious vanilla ice cream; this was definitely not your grocery store ice cream! Overall, we had an enjoyable dinner and would recommend other give it a try!
